Here at the Coffee Compass we love trying all methods of roasting and brewing coffees. Recently we were approached to supply some traditional Arabic coffee. After much experimental roasting and discussions with roasters overseas we came up with a special Yemen Arabic blend that is roasted in a different manner to a lighter roast level than standard coffees.
Traditional Arabic coffee is served in a small 2.5ounce cup, which is not a lot of coffee by Western standards. The focus is on the intensity of flavour. The coffee is often brewed with Cardamom and sometimes also with Saffron. We would recommend the following method of preparation;
Our Brewing suggestion:
Half a litre of cold water,
50g of Coffee Compass Arabic Coffee/Cardamom mix,
A suitable heavy-based saucepan (to heat on a stove),
Arabic 2.5oz coffee cup.
Method
1) Bring the water in your appropriate stovetop heavy-based saucepan to a gentle simmering boil.
2) Add the fresh ground Coffee/cardamom
3) Allow the liquid to simmer boil for 12-15mins, there is no need to stir.
4) Turn off the heat and allow the mixture to stand undisturbed for 2 minutes in the saucepan.
5) Gently pour the liquid into a thermos jug or directly into the cups for serving, without disturbing the sediment at the bottom of the saucepan.
6) Serve to your guests by pouring with the left hand and offering the cup with your right hand.
7) It is traditional for the coffee not to be sweetened (although some do use honey) but instead served with dates or sweet patries.
We love this method of coffee preparation and thoroughly recommend it.
