    It is harder to roast. 16 to 19 minutes (depends on your roasting machine) till a full roast. Needs to be roasted well to develop the flavours fully. I tried stopping "at" the second crack and the coffee had not quite developed and it was still bitter. These beans also take longer to darken. Then I roasted the next batch further, stopped it only after the second crack was finished. This is the stage when it gets very oily. Stop immediately to prevent the oils from burning off. Then it was great. Quite oily and rich tasting. Probably among the most satisfying coffee ever. Very strong, rich, smooth, caramel after-taste are all the words that come to mind. The Indian Monsoon Malabar coffee beans are more oily than the Indonesian Java, to which it has some similarities, and in some ways appear to have a more smoother sweeter taste. It is worlds apart from the acidic and refreshing Kenyan Coffee. Malabar coffee is full of body, aromatic and like caramel. I wanted to write this review also because cofeecompass.co.uk delivered quickly. These single varietal green beans are very clean and of excellent quality. Highly recommended!
