This is a SHG coffee (Strictly High Grown).  This coffee requires careful roasting to bring out it's finer qualities which can be defined as being the best of Brazilian and the softer Central-American coffees.  It is both nutty and smooth with a bright finish, but lacks the acidity often found in Central-American coffees.
