Finca Aurora in Huatulco is located in Southern Mexico, along the Pacific coast in the Oaxaca (pronounced Wa-ha-ca) region. The farm is located in the basin of the Copalita river at around 1200-1600 masl. The region boasts some incredible scenery (Huatulco translates as 'Place where wood is worshiped') and fantastic soil conditions, coupled with natural tree shade canopies that make it perfect for growing quality coffee. The farm chooses to use minimum agrochemicals and selectively hand pick the coffee, along with a careful washing process make this a very clean cup.
The Aurora farm derived its name from the large number of eagles in the area that would come and lay their eggs in nests made from plucking their own feathers.
There is a wonderful depth to this coffee, with the accentuation on the deeper, richer notes. This Finca Aurora has a smooth body with a chocolate sweetness. We are roasting this at a medium roast, but this coffee is the basis of the Rancheros Mahogany Roast. If you'd like this coffee at a higher roast level, do try that!
