This coffee is a fantastic all rounder. Sweet and clean with a soft acidity, there is a milk chocolate notes, with a soft candied orange & toffee notes. Very good brewed coffee which works well as an espresso - great all rounder.
This lot comes from the community of Pedernales, La Coipa high in Peru's Cajamarca region in San Ignacio. It is a result of the hard work and passion of Helibrando Martinez & Rosas Cruz, both of whom are widely acknowledged as the best producers of quality coffee in the village. Both men are committed to quality and have a great skill set and deep knowledge of coffee production.
Finca Las Pirias is larger than many farms in the region and at 1900m.a.s.l. the farm is also very well situated for great coffee. The farm of 9 hectares is composed entirely of Caturra & Typica varietals and is certified Organic.
Both farmers are members of The Santuario Association of Coffee Producers (Asociacion De Productores Cafetaleros El Santuario) which was created in 2017 to help producers in the Cajamarca region improve the quality of their coffee production. The name "Santuario (sanctuary)" refers to the fact that all the farms working as a group are in the buffer zone of the Tabaconas - Namballe National Sanctuary. This environmental placement is important to Santuario, as the company prioritises environmental conservation and biodiversity.
